This chocolate stout is made using Hershey’s Cocoa and is infused with whole Madagascar vanilla beans and Bespoke bacon, just in time for Winter. It has just a hint of vanilla and a slight smokiness from the locally procured, nitrate free bacon.
Our founder decided to experiment with chocolate & bacon in a beer after experiencing chocolate covered bacon for the first time. We start with an English Stout brewed with 50 pounds of Hershey’s Cocoa to create a brilliant chocolate stout. We then infuse it with over 100 Madagascar Vanilla Beans and bacon to get a touch of vanilla and smoke. The first few batches used a vegan friendly bacon, but that didn’t fit with our belief that anything we brew should be naturally sourced and not come from extracts or purees. Then we met the folks from Bespoke Bacon. Working with them we custom smoke a locally sourced pork belly and render out mostly all of the fat to give us that touch of smokiness without a single smoked malt being used. Doing so made some call us insane.
It just so happens that we brewed this beer in memory of a childhood friend of our founder who passed away in a tragic explosion in 1999. You can read out the accident here. Jay Insana was the son of the babysitter who helped raise our founder since he was a baby so the two grew up as brothers. After his death many of Jay’s close friends got a tattoo in his memory. That tattoo features a spider with the Claddagh Ring. This image is what makes up the logo for this beer as seen above. Needless to say this beer means much to us here at Prism and we hope you enjoy this chocolate stout as much as we do.
